Blueberries and Cream Protein Bar Recipe

It’s time for some sweets! We are going to be making a delicious protein bar with a few simple ingredients in this protein bar recipe. I am a huge fan of Quaker oatmeal Blueberries & Cream. It has amazing flavor and a nice bonus for being on the healthier side.

Protein Bar Recipe:

7 packets Quaker Oats – Blueberries & Cream
3 Scoops Whey Protein – of choice
8 oz Unsweetened Vanilla Almond Milk
8 Tbsp Crunchy Almond Butter
1 Tub Oikos (or similar Greek Yogurt) 5.3oz

Mix all ingredients in a bowl (that has a lid) and then refrigerate to allow the oats and protein to pull in the moisture from the almond milk. After four hours or overnight, remove from the refrigerator. Preheat oven to 350 degrees. Grease an 8×5″ glass baking dish. Pour mixture into baking dish. Put the dish into the preheated oven for 24-26 minutes (the edges will be lightly brown).

These bars come out incredibly light and moist so do not be fooled if they look undercooked. They will cook a little further once pulled from the oven. The ingredients also don’t traditionally require cooking so internal temps are less concerning. This recipe makes 8 bars.
